Grab two pieces of Gemsbok (also known as Oryx or any game meat) loin or fillet weighing 800gr – 1 kg. Rub with olive oil, salt, black pepper, lemon juice, braai spices and let it lie for around an hour before you braai.

Braai the meat for 10 minutes (no longer, so it doesn’t overcook). Remember, game meat doesn’t have much fat in, so it tastes best if you eat it pink. If you have a weber or can place some kind of lid on the braai, add some fine pieces of wood that make smoke and let the meat cook for another 4 minutes in the smoky heat.

Remove from heat and let the meat rest – then EAT and ENJOY 😊
