10kg Wild Boar (Bush Pig)
Smoke Essence
apricot jam
Marinade:
500ml orange juice
500ml mango juice
500ml lemon juice
250ml avocado Oil
25ml Crushed garlic
10ml mixed herbs

How to make it

  • Rub pig with smoke essence and let stand for 60min, be very careful with smoke essence too much will make meat bitter
  • Mix all ingrediEnts of marinade together and let stand overnight
  • Fix pig on spit and inject all over with marinade
  • Baste every hour with marinade until done
  • 10min Before carving glaze with apricot jam
