1.5kg – 2kg Warthog roast/leg.
1 large chopped onion
2 carrots chopped
1 clove of garlic
4 laurel leaves
10 pepper corns
1 teaspoon of whole coriander
1 tablespoon vinegar
1 tablespoon worcestershire sauce
1 tablespoon coarse kosher salt
1 tablespoon sugar
1 tablespoon origanum
Honey & mustard
Put all ingredients into a stainless steel steam pot or big glass bowl and cover with lukewarm water. Let is stand for 2 hours. Then, bring it to the boil on low heat for 1 hour.
Carefully open the pot and turn the leg/roast over. Taste the sauce to see if it’s salty enough. Close the pot and let is continue to steam for around 40 minutes.
The meat should be soft and juicy at this point but not falling apart. Place the meat in a roasting pan. Spread some honey and mustard on the meat and grill in the oven or even in the microwave for 15 minutes.
Thicken the sauce with a little Bisto or cornflour and you’re ready to enjoy!
